First, add the oil to the pot over medium-high heat and brown the beef cubes. Once done, discard the fat. Then, add the onion, carrots, celery, garlic and thyme, stirring until the vegetables start to soften. Next, stir in tomato paste, flour and beef broth. Finally, add the potatoes, bay leaves and season with salt and pepper.
Secure the lid and close the pressure valve. Cook on high pressure for 15 minutes, then do a quick release. Serve hot with freshly chopped parsley and enjoy!

You will need 1 tablespoon of olive oil, 1 lb of boneless and skinless chicken thighs cubed, 2 cloves of garlic minced, 1/2 teaspoon of rosemary, 1 teaspoon of thyme, 2 tablespoons of all-purpose flour, 1 cup of low-sodium chicken broth, 1 cup of diced carrots, 1/2 cup of diced celery, 1/2 cup of diced onion, 1/2 cup of frozen peas and 2 bay leaves.
Start by adding the olive oil to the pot over medium heat. Add the chicken cubes and cook until golden. Then, add the garlic, rosemary and thyme and stir until fragrant. Stir in the flour and chicken broth until combined. Next, add the carrots, celery, onion and peas. Secure the lid and close the pressure valve.
Cook on high pressure for 10 minutes, then do a quick release. Adjust seasonings with salt and pepper if needed. Serve warm with a sprinkle of freshly chopped parsley on top and enjoy!
